HAZELNUT STARS


Hello ;)

So .. Christmas cookies almost gone so I decided to try a new recipe. According to my children are really  the best so far and I think I'll have to bake again tomorrow as there are almoust half missing already ;) 


RECIPE FOR 60
Dough preparation time : 30 minutes
Cooking time and the final preparation: 90 min

INGREDIENTS
350g spelled flour
6 g of baking powder
2 g of salt / pinch
100 g ground hazelnuts
30 g of ground seeds ( chia + linseed)
1 vanilla sugar
1 tablespoon vanilla concentrate/liquid
3 g of cinnamon
1 g ginger
1 g of nutmeg
70g brown sugar
10 g of stevia powder
200 g margarine (or butter -flavored )
1 egg
2 tbsp rum
1 grated lemon zest or lime


All the dry ingredients mix together . Then make a hole in the middle of the mixture and add the wet ingredients and chopped to pieces margarine . Knead until ingredients from sticking together into a dough . Place the dough in the fridge for half an hour.

When the dough is cooled divide it into four parts . Each of which roll between two baking paper , so that the dough does not stick on the kitchen counter . The thickness of the dough should be about 3mm . 

With the scale model in the form of stars ( can also use any other form ) we make a shape of a cookie. We can put a model into a flour first (it will be easier to cut holes and that the dough won't stick to a model). 


 In one part cut out smaller holes . We must be careful that we have half the cookies with holes and half without . Then you remove the dough around the shapes and put baking paper with cookies on it on a baking dish and in the oven. 



Bake cookies at 195 degrees for 8 minutes .

While the first cookies bake, roll out the dough again and repeat the process until you run out of dough.

When all the cookies are baked you put on baking paper the ones with holes close to each other and sprinkle them with powdered sugar . Meanwhile, heat the apricot jam to the liquid situation. With a brush for cooking, spread jam on a cookie without holes and cover it with the one with the holes . Repeat this procedure until we have lubricated all cookies.

PASTICCIO WITH TRUFFLES

Hello everybody! 

So my kids made me a cooking blog. I was really excited and ofcourse I had to make them a good lunch yesterday.  I made pasticcio with truffles and it was amaziing. I needed some time to write down the recipe and here it is 


recipe for 5-6 people
Preparation time : 45 minutes
cooking time : 30 minutes

INGREDIENTS
140 g macaroni
250 g tortellini with spinach ( you can use only one type of noodle )
200 g of turkey and beef (you may use only one type of meat )
1 can of mushrooms in brine
250 g light mozzarella
1 pinch of salt
spice mix Vegeta/salt
1 small onion
5 cloves of garlic
1 tbsp balsamic vinegar
1 tbsp olive oil
20 g parmesan cheese
1 teaspoon of rosemary
1 teaspoon sage
1 teaspoon Savory
pinch of pepper
2 grains a strong pepper or 3 chilli seeds
* You can also add 1 teaspoon of pesto Genovese

WHITE SAUCE / béchamel
1 tablespoon butter
1 tablespoon oil
1 tbsp spelled flour
pinch of nutmeg
pinch of salt
2 teaspoons truffle
3 dl milk
1 dl of water

HOW YOU MAKE THE White sauce / béchamel
We put oil and butter in a pan and heat until it gets liquid. Then we remove the pan from the heat and add spelled flour. We mix everything and put the pan back on the heat. Then we add truffle and fry for about 15 seconds. Than we remove the pan from the heat and add milk. We need to stir the sauce all the time. We also add salt and nutmeg. Than we put the pan back on heat and stir until we get thick liquid. The mixture is stirred until it is boiling, water was added and again stirred and dismiss.



HOW YOU MAKE PASTICCIO
We briefly saute the meat on olive oil in which we added chilli seeds in a pan (the meat is cut into small pieces). When the meat becomes golden brown , add thyme, pepper , rosemary and sage, finely chopped onions and sliced ​​mushrooms . Stir , add the butter and seasoned with savory , parsley , nutmeg , Vegeta , ginger , balsamic vinegar and garlic . Mix well and leave for another minute and remove from the heat . You can add salt instead of Vegeta.

Parallel cook macaroni in boiling water (about 10min ) . Once cooked pour off water and add to meat mixture and mix.

Brush a baking tray with butter and breadcrumbs and add half the pasta. On the first layer add half of mozzarela cut into pieces, parmezzan and half of the white sauce. Then add another layer of the pasta and repeat the process with mozzarella . Pour the remaining white sauce and grated parmesan cheese on it.





All this is placed in the oven and bake for 20min at 185 degrees and 10 minutes at 200 degrees until it gets golden.

MARBLE CAKE


INGREDIENTS
5 dried figs / cut into pieces
4 dried prunes / cut into pieces
handful of raisins
handful of almonds ( chopped )
A handful of nuts ( roughly chopped )
Tablespoon sesame and flax seeds ( ground )
1 tablespoon of chia seeds
50 g of black chocolate ( 80 % )
The aroma of vanilla ( 6 drops )

2 eggs
200 g of butter
3 tablespoons rum
100 g of white sugar
100 g of brown sugar
500 g spelled flour
8 g of stevia sugar
12 g baking powder
2 dl milk (1.6% fat)
3 tablespoons soy cream
2 tablespoons of cocoa powder

A pinch of ginger , turmeric , cinnamon and nutmeg

PREPARATION

Butter at room temperature mix with sugar and add the eggs , rum and vanilla aroma .

In parallel , combine the flour , baking powder , figs, prunes , raisins , almonds, hazelnuts , sesame and flax seeds, chia seeds, chocolate and spice.  Mix everything with butter ( and other ingredients that are already there )

In parallel, in a small bowl , mix cocoa with soy cream or milk.

¾ dough you put into the model , which is smeared with butter. The remainder of the dough is mixed with cocoa with soy cream and added in the same model . With a fork stir the mass.

You bake for 50 min at 200 Celsius.

HOMEMADE BREAD

First.. Merry Christmas to everybody :) 


Today my dad made a fresh bread for breakfast. You know that feeling when you wake up and you smell a fresh bread? It's amazing :) So here is the recipe 

INGREDIANTS 
360 g water
1 teaspoon balsamic vinegar
2 teaspoon salt
1 teaspoon Stevia sugar
1/2 teaspoon brown sugar 
600 g spelled flour
7 g dry yeast
1 big spoon ground sesame seeds and ground linseed (mixed)
1 big spoon linseed
1 big spoon sesame seeds
1 teaspoon chia seeds
pinch of rosemary, savory, oregano, thyme

You put all ingrediants in a bread maker and bake the bread for about 2 hours.

HOMEMADE TUNA SPREAD

About two weeks ago was my birthday and I hosted a small party at my place. I'm quite fed up with the snacks you can buy in the supermarket and I think everybody are, so my dad decided to help me and suggested that we make a tuna spread. And the result.. everybody said that it was really delicious and asking for the recipe so here it is : 

INGREDIANTS
 1 tin of tuna in olive oil (weight is 194 with oil)
4 tins of tuna in brine (weight is 194 with brine)
6 clove of garlic (medium size)
4 pickles 
2 pieces of filled pepper (sweet one)
1/2 onion
1 small hot pepper
2 boiled eggs
8 olives 
1 small spoon of mustard 
10 capers 
1 big spoon pesto genovese 
small bunch of parsley
6 salted fishes 
1 tea spoon rosemary
1 tea spoon savory
1 tea spoon pepper
1 tea spoon salt 
1 tea spoon thyme
1 tea spoon oregano
1 tea spoon sage 
1 tea spoon chives
1 big spoon light mayonese
6 small pieces of parmesan cheese 

PROCEDURE 
You mix everything together except the tuna. When all is mixed you add tuna with the oil and mix again. Then you add all others tuna except you put brine away. 

Then the best way to serve it is to put spread on a bread and add picle and cheese on it. Instead of pickle you can use sweet pepper,fresh red pepper or tomato

CHRISTMAS COOKIES

So.. I wake up everyday with a little bit of bad filling as I am eating so many sweets and cookies during holidays .. I'm sure I'm not the only one with that problem :) But my dad started baking these cookies that after you eat few of them you don't have a bad fillng.. and the cookies are soooo goood. You HAVE to try them :) 

So here is the recipe for about 30 cookies :) 

INGREDIANTS
100 g ground almounds
350 g spelled flour
100 g butter 
100 g margarine (or butter)
pinch of salt
50 g brown sugar
14 g Stevia sugar 10 g vanilla sugar 
4 g baking powder
2 whole eggs

PROCEDURE 
You mix flour and baking powder in one bowl. Then you make a hole in a flour and put in : pinch of salt, brown sugar, Stevia sugar, vanilla sugar and two eggs and you mix these ingrediants with a little bit of flour. You put ground almounds on the top and butter and margarine. Now you mix everything together with your hands until you get quite hard dough. You should knead ingrediants long enough :) 

Than you put dough in a fridge for about half an hour. 

You take quoter of the dough and rolled out on about 2-3mm thick. You make different shapes with a models. If you are making for instance shape of rose make sure one rose is full and one rose has three small or one big hole in it. You bake cookies for 8min on 180 C (celsium). You repeat this procedure until you use all dough. 

Then you take all cookies with a holes in them and sprinkled them with granulated sugar. Then you heat some apricot marmelade. You take one rose with a holes and one without holes. You put marmelade on the one without holes and cover it with a rose with a holes. And you make that with all the cookies. 

ps instead of almounds you can also add hazelnuts. 

The cookies are amaaziiing. You can eat them yourself or give them to your closest ones for a gift :)

...to begin with...


Me and my brother were thinking about a perfect gift for our dad and we think that we should start a food blog for him. The thing is that our dad just loooveees to cook and his dishes are amazing. So good and so tasty that you can't stop eating them. But the best thing is that all the dishes are really healthy, low fat and still the flavours are amazing.

So with this blog we try to convince our dad to start writing down his recipes and show others that you can eat good but still keep in shape. And he cooks everything.. from main dishes with seafood, different kinds of meat, pasta in so many ways to dessers such as Chrismas cookies, pies...

I'm gonna start with publishing his recipes and hopefull he'll continue :)
