HEALTHY EASY TO MAKE COOKIES

So last week I've decided to try to bake healthy and good cookies and I manage to achieve both. Ofcourse they were gone in the same day :) 

Here is the recipe : 100 g pirine flour100g ajdove flour3,5g baking powderkonica noza sode bikarbone5g stevia + 2 natrena 100g marcipan 2tbsp low fat greek yoghurt1 medium size banana1tsp extract vanilije 

We mix all the ingrediants together, make small balls and squezze them. Than we bake the cookies for about 13minutes on 200 degrees.

STRAWBERRY FITNESS PIE

One of my last desserts. It really taste so delicious! And so little calories, it's perfect you won't feel bed even if you eat it all

INGREDIANTS
DRY INGREDIANTS
30g oats ( we mix them so we get a flour texture)
50g coconut
5 g stevia sugar
3 g baking powder
70 g Vanilla proteins

We mix all dry ingrediants together.

WET INGREDIANTS
120ml water
2 bananas (mashed with fork)
4 egg whites

We mix egg whites so we get a creamy texture. Then we add water, bananas and dry ingrediants and mix together. We put the mixture in a baking dish (we put in a baking dish baking paper) about size 30/20cm. After the mixture is in a dish we put strawberries or berries on top and put it in the owen for 35minutes on 175 degrees.

Wait until it's cooled down.

COTTAGE CAKE

I was trying to make a reeealllyyy good light dessert :) And here it is :)

DOUGH

20g brown sugar
20 g of butter
3 eggs
15 g of stevia sugar
170g spelled flour + baking powder (4g)
1.5 banana
15 crushed almonds
1 vanilla sugar
2 tablespoons rum
lemon peel

FILLING

300g light ricotta

All the sugar was placed in the container. Divide it in half and add half of it to the egg white, half to the yolk (egg yolk, add melted butter). Whisk the egg whites and yolks (creamy texture). Put ¾  whites and  ¾yolks in one bowl and the rest in another. In the bigger bowl add  flour in which we put baking powder, almonds, rum and lemon zest.

In another bowl we add cottage cheese and mix.

In long baking dish pour the batter. Then add the cheese and stir it into the dough with a fork.

Bake for 40min at 180 degrees.

TUNA BURGERS WITH ZUCCHINI

INGREDIENTS
1 large tuna in brine
1 medium-sized zucchini
4 tablespoons peeled oatmeal
1 egg
1/3 of onion
1 garlic
a piece of prosciutto
2 tablespoons bread crumbs
1 teaspoon balsamic vinegar

SPICES
parsley, thyme, basil, rosemary, pepper, nutmeg (a little). All together about 1.5 teaspoons.

COURSE
On olive oil we roast onion and prosciutto (cut into pieces). Then we put it in a large bowl. We add the tuna and zucchini (care that is really dry, otherwise the mixture will be too wet). Then add the spices and mix. Finally, add the egg and breadcrumbs.

Shape patties and put them on a baking dish and bake in the owen for 25 minutes on  190 degrees.

Tip: Grate the zucchini and season with salt before, so the water drop. Afterward make it even more dry with kitchen towel.

MARBLE CAKE WITH CURD

So, today I was watchin Rudolf bakery on 24kitchen and he was making marble cake with riccota cheese.. it looked so good and yummy I had to try to make my own. Ofcourse, as always, I didn't have all the ingrediants he use and the store was already closed so I made my own version of it. So here is the recipe : 

DARK DOUGH
170 g spelled flour
4 g baking powder
50 g ground cocoa
2 eggs 
90 g soft butter
50 g coconut butter
plug of rum
70 g ground sugar
22 g Stevia sugar 

First you mix butter with sugar, eggs and rum. After getting a creamy texture you add flour (you put cocoa and baking powder in a flour before adding to creamy mixture of eggs, sugar and rum). You mix all together. 

WHITE DOUGH
170 g spelled flour
4 g baking powder
2 eggs 
90 g soft butter
50 g cocout butter
plug of rum
70 g ground sugar
22 g Stevia sugar 
1 spoon Vanilla extract

First you mix butter with sugar, eggs, rum and vanilla extract. After getting a creamy texture you add flour (you put baking powder in a flour before adding to creamy mixture of eggs, sugar and rum). You mix all together. 

STUFFING
500g light curd
1 egg
15 g Stevia sugar 

You mix all together until you get a creamy texture. 

You take a round model for a cake and first put in a dark dough, then white dough and on the top you put stuffing. Afterward you take a for and mix so the stuffing is not on the top but goes inside a marble. 

You put it in the owen and bake for 60 minutes on 180 Celsius.

PIZZA RUSTICA

Some time ago I prepared a pizza for my son that was so good that he prepared it with his friends on New Years eve. All his friends were so impressed that I decided to share the recipe with you .

 INGREDIENTS FOR THE DOUGH
400 g spelled flour
A pinch of brown sugar
Half a teaspoon marjoram
Half a teaspoon of basil
Half a teaspoon of oregano
Teaspoon salt
220 g warm water
1 tablespoon olive oil
20 grams of fresh yeast or 6 g of dry yeast

PREPARATION FOR THE DOUGH WITH FRESH YEAST
We put 220g of water in a cup . Crumb the yeast in the water , add a pinch of sugar and half a teaspoon of spelled flour . Place the cup for 20min in the oven pre-heated to 50 degrees .

On the kitchen counter put flour. In the middle make a hole and put in a marjoram, basil , oregano , salt and a tablespoon of olive oil.  Mix all together and added water with yeast . Mix everything together into a smooth dough. Knead for so long that all the ingredients mix together and to get smooth and not sticky dough . If the dough is too sticky you can add up to 2 tablespoons flour .


  Put dough in the bowl and let it rise for about half an hour at 50 degrees . It can also be located at the room temperature but it will require a longer time for raising .

If you work with dry yeast mix with the flour , the process remains the same.

PREPARATION tomato sauce
7 filed a dry tomatoes
1 tablespoon of oil from tomatoes
2 tbsp olive oil
2 tablespoons water
1 teaspoon tomato extract
5 fresh basil leaves or a teaspoon dried basil
4 fern fresh oregano or half teaspoon dried oregano
½ teaspoon salt
½ teaspoon pepper
½ pinch of chilli peppers or

Mix all together with a mixer . If the texture is too thick add water .

PREPARATION OF PIZZA
8 pieces of prosciutto
2 mozzarella
Dried basil
Dried oregano
Fresh rucola

When the dough has risen we remove it from the container and place on a baking sheet that you previously spread with olive oil . The dough pulls the baking tray and make a handkerchief around . Then coat with tomato sauce . Then add the ham and then mozzarella and olives. On the top sprinkle more dry oregano and basil .

Bake for 13min at 250 degrees.

When the pizza is baked you can add fresh rucola or any other type of lettuce .

Ps instead of prosciutto you can also use ham or any other sausage . Also, instead of using mozzarella you can use and other cheese.

CHICKEN VEGETABLE ROLL

So a recipe is now few days old but it was sooo good i needed to write it down. So after all the sweet days it's really good for your tummy.

 INGREDIENTS FILLING 
4 cloves of garlic
1 large leek
3 medium sized carrots
150g chicken breasts
100g light ricotta
1 egg
3 tablespoons soy cream
pinch of salt
Pinch of nutmeg
pinch of ginger
pinch of pepper
pinch of thyme
pinch of oregano
Teaspoon of Vegeta
1 teaspoon of parsley
Half cube coconut fat

DOUGH
300g spelled flour
180g warm water
pinch of salt
Tablespoon olive oil

The vessel was charged with the flour , salt and oil is added . Stir and add all the water . Knead until a smooth dough . Brush loaf with olive oil and wrapped in transparent foil let rest about 30 minutes .

PRODUCTION / PROCESS

PREPARATION COTTAGE CHEESE PASTE
Mix cottage cheese, egg, two tablespoons soy cream , a little salt , nutmeg and dried parsley .


 THE FILLING
Fry the garlic in coconut fat and add to the finely chopped chicken breast . When the meat is golden brown add pieces of sliced ​​leeks and carrots . Add all the spices . Cover and braise 10 minutes

PROCEDURE
On a floured napkin roll stretch thin piece of dough . Then top it with prepared cheese and coated with a mixture of prepared roasted chicken breast with leek and carrot. Use napkin to help you twist bagel. Roll can be covered with a mixture of cream and spoon egg that we have in curd saved or butter .

BAKING
Place pie on baking paper and bake for 30 minutes at the temperature of 195 degrees Celsius heaters above and below .

The dish can be served alone with salad bowl or next to prepare some sauce ( mushroom hunting , tomato , mayonnaise - Tartar ..... )
